Solid post!

I think that you're overlooking the role of the "expediter" -- the manager. You see this more during lunch when the lines grow really long: the manager steps in and looks at the longest queue, and begins personally expediting the orders. Repeat until the lines are short again. The main benefit is that without changing the process (KISS) the manager can quickly clear the lines without having to overstaff.

What you really are asking for is the manager to expedite when you're in line. Or at least lower the threshold for expediting in the mornings.

Very good analogy!! To expect that one single process will satisfy all potential situations is a dream... instead, rely on people (trust them) to be creative and that they will respond to specific situations in an empirical way is the way to go... and maybe clients will start to have their coffee on time

Although I prefer Starbucks coffee ;) I love your analogy.

Organizations that rely heavily on process and procedures typically do not believe people (aka human beings) are capable of thinking, hence they feel the need to eliminate any potential risks at the expense of the customer experience.

Some believe it is better to inflict a delay on all customers instead of dealing with unpredictable activities. Funny how traditional project management sounds familiar in this context...
